The Fussy Eater’s Guide to Lite N Easy

Have you ever thought about trying the Lite N Easy way, instead of cooking dinner every night?

I know I have, ever since one of the girls at work used to bring in Lite N Easy for lunch – and OMG, it smelled and looked so good, it made my mouth water!

Not only did the food seem amazing, she went on to lose quite a bit of weight. The Lite N Easy way suited her as she lived by herself, and found it hard to get motivated when cooking for one.

I never really thought much more about it, as I have a family to cook for plus, it has to be said, I really enjoy the taste of my own cooking!

But with the recent commotion of packing up, moving, and putting our house on the market, we decided that for our sanity we needed to go down the convenience food path. But where could we find meals that were nutritious, quick, easy, and minimised mess in the kitchen (kinda important when you’re trying to keep your house immaculate for inspections!)?

And just like that, I jumped online and put in my first order with Lite N Easy.

It must be said that I am quite fussy when it comes to food. I don’t like most takeaway meals, I don’t like any form of seafood, don’t eat anything spicy (can’t even tolerate soft drink as it burns my mouth) – and I find most frozen meals are about as tasty as the box they come in.

What I Liked About Lite N Easy

I should emphasise, I was not doing Lite N Easy for the weight loss benefits – though it could help, as I think one of my problems is portion control. I can’t check if it’s made any difference however as our scales have been packed and put in storage!

Instead, for me, it’s been purely about convenience. And I have to tell you:

Not all Lite N Easy meals are frozen – quite a few are prepared fresh, ready for you to refrigerate. However the downside is they need to be consumed within 4 days.

My Lite N Easy Meal Reviews

The menu changes with the seasons, so my selections are all from the Spring Menu.

I’ve got to be honest – being a bit of a fussy eater, I haven’t loved everything … see for yourself.

  1. Chargrilled Lamb with Spinach and Pine Nuts: this fresh meal was without a doubt my favourite. It comes with a yummy dressing and feta to sprinkle on top.
  2. Roast Lamb Dinner: this was much like any other frozen roast lamb dinner from the supermarket; in other words, I wasn’t fussed. The roast potatoes are just wrong, and it included sweet potato not pumpkin, much to my disappointment.
  3. Steak Diane:  Another one of the fresh meals, and I loved it, especially the fresh vegies. But then I always love fresh vegies (especially if I don’t have to prepare them!).
  4. Chicken Enchiladas: I’d read good reviews of Lite N Easy’s Mexican dishes, and sure enough, this one didn’t disappoint.
  5. Tortilla Stack: Unfortunately, this one was inedible for me – far too spicy, even after I’d added a dollop of sour cream. Mr 24 loved it though.
  6. Corned Beef with White Sauce: Maybe I’m spoiled, as I usually do corned beef in the slow cooker and it’s so tender and luscious it just falls apart in your mouth – so this really couldn’t compete. I did like the mashed potato though.
  7. Chicken Scallopinni: I’d definitely choose this one again: the scalloped potatoes and mushroom sauce were what made this meal so tasty.
  8. Slow Cooked Lamb Shanks: Edible, but certainly nothing special when compared to what I make or even what I can get at the local pub.
  9. Flame Grilled Meatballs with Mushroom Gravy: Not bad …
  10. Hearty Beef Casserole: Quite liked this one, although the beef wasn’t as tender as I would have liked.
  11. Honey Soy Chicken: Quite enjoyed this one too.
  12. Pepper Steak: This was quite tasty; I particularly liked the potato and pumpkin mash. (There’s nothing like a freshly cooked steak, though, sorry Lite N Easy, just saying …)

I didn’t even bother ordering things like Roghan Josh, Beef Korma or Chicken Tikka, as I know from past experience that I just can’t eat even “mild” versions of these, no matter how yummy they might be. My taste buds go into revolt, my nose and eyes start streaming, and let’s just say spicy food plays havoc on my digestive system …

My Lite N Easy experiment has now drawn to a close and I am enjoying eating “real” food again, though I definitely appreciated having a break from kitchen duties for a few weeks.

Would I do it again? Probably, if I was unable to cook for myself for any particular reason and the hubster wasn’t around to step into the kitchen instead 😉 .
