Yummy Pasta Bake

This yummy recipe makes a bit of a change from the regular “spag bol” – and it’s great for feeding the hordes and stretching your food dollar further!

Ingredients

fresh veges
Lots of fresh vegetable-y goodness in this yummy recipe – just don’t tell the kids!
  • cooking oil spray
  • 1 onion
  • 1-2 carrots
  • 1-2 celery sticks
  • 500g mince
  • 400g can diced tomatoes
  • 1 sachet tomato paste
  • 1/4 cup red wine
  • 150g frozen spinach, defrosted in microwave, drained, and chopped finely.
  • 300g pasta spirals or similar
  • 2 eggs, lightly beaten
  • 1 1/2 cups grated cheese

Method

  1. Put pasta on to boil.
  2. Finely chop onion, carrots and celery. Spray frypan with cooking oil, add vegetables, cook until onion softens.
  3. Add mince and stir to break up lumps. Cook until browned, drain off any fat.
  4. Add tomatoes, tomato paste and wine. Cook stirring occasionally for about 10 minutes.
  5. Remove from heat and stir in spinach.
  6. Preheat oven to 200 degrees Celsius.
  7. When pasta is cooked, drain and rinse under cold running water.
  8. Add pasta, eggs and half the cheese to the mince mixture in the frypan. Stir to combine.
  9. Spray a large casserole dish and tip in mixture. Sprinkle with rest of cheese.
  10. Bake for about 30 minutes until golden brown.

The other thing I like about it, is that I manage to smuggle lots of healthy vegetables in. Even if my kids *do* notice, they certainly don’t complain!

This recipe for yummy pasta bake is a great Winter warmer and a firm favourite with my family – hope it is with yours too!

      Yes, home made macaroni cheese is another fave – and another budget beater!!!

    Pasta bake is the best isn’t it! So easy and healthy. Hmm…our favourite winter warmer dish is a curry of some sort.

      I wish I could eat curry. Even the mildest makes my nose and eyes stream mercilessly!

    This looks delicious Janet! It’s so funny because my husband asked for something very similar not long ago and I wanted to put the recipe on the blog! It’s a bit like yours less the veggies!
