This yummy recipe makes a bit of a change from the regular “spag bol” – and it’s great for feeding the hordes and stretching your food dollar further!
Ingredients
- cooking oil spray
- 1 onion
- 1-2 carrots
- 1-2 celery sticks
- 500g mince
- 400g can diced tomatoes
- 1 sachet tomato paste
- 1/4 cup red wine
- 150g frozen spinach, defrosted in microwave, drained, and chopped finely.
- 300g pasta spirals or similar
- 2 eggs, lightly beaten
- 1 1/2 cups grated cheese
Method
- Put pasta on to boil.
- Finely chop onion, carrots and celery. Spray frypan with cooking oil, add vegetables, cook until onion softens.
- Add mince and stir to break up lumps. Cook until browned, drain off any fat.
- Add tomatoes, tomato paste and wine. Cook stirring occasionally for about 10 minutes.
- Remove from heat and stir in spinach.
- Preheat oven to 200 degrees Celsius.
- When pasta is cooked, drain and rinse under cold running water.
- Add pasta, eggs and half the cheese to the mince mixture in the frypan. Stir to combine.
- Spray a large casserole dish and tip in mixture. Sprinkle with rest of cheese.
- Bake for about 30 minutes until golden brown.
The other thing I like about it, is that I manage to smuggle lots of healthy vegetables in. Even if my kids *do* notice, they certainly don’t complain!
